The Braising Pot is a CNC-controlled, constant-temperature jacketed braising unit engineered for braising processes. With a batch capacity of 50-1000L, it specializes in automated braising and flavoring of meats, tofu products, and other ingredients, supporting both batch and semi-continuous operations. The inner pot and core jacket components are constructed from 304 (or upgraded to 316L) food-grade stainless steel. Its dual-motor design features one motor controlling the jacket heating system (steam or electric heating), which uniformly distributes heat through the jacket to maintain a constant braising temperature. This simulates the slow, manual braising rhythm, preventing localized overheating that could cause ingredients to burn or result in uneven flavor absorption. Post-braising, ingredients achieve tender texture with deep flavor penetration and rich marinade aroma. The second motor controls the automatic basket-turning mechanism (or stirring system), eliminating manual handling. This prevents scalding risks from high-temperature marinade while ensuring uniform ingredient contact with the marinade in each batch, minimizing human operational errors.
